Oh how ive gotten away from the basics of this blog!
To jolt us back! Pumpkin bars, oh they are so good, A cross between a pumpkin pie and a cake, thease are great plain or with cream cheese frosting.
Im a big fan of spice cakes and whatnot and this falls right in with those, its a pumpkin cake in essance but simple to make and tastes sooo good.
2 cups flour, i use whole wheat flour
1 1/2 cup sugar i use organic cane sugar
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon baking soda
dash or two of salt
1/4 teaspoon ground cloves
4 pre beaten eggs
1 cup oil i use EV olive oil
16 oz pumpkin
Mix flour, sugar, baking powder, cinnamon, soda, salt and cloves, mix well. Add in beaten eggs, pumpkin nd oil and mix till well combined. I use my kitchen aid mixer and let it mix for about 10 minutes ( while i cleaned up )
Spread into ungreased baking pans. I used two 8X8X2 inch pans, but this will easily work in a 1/4 sheet baking pan as they do raise!
Cook at 350 for 25-30 minutes ( i needed 35 in my oven) till a knife in center comes out clean. Cool on a wire rack and slice into bars, i cut mine into 6 bars per 8X8X2 pan.
Optional, frost with cream cheese frosting. But its good without!
